Just checked up an American dictionary, it labels lettuce as variable as well, so it is not a British/ American difference, but rather depends on the circumstances.

Thank you. I think they missed out a group of nouns called variable nouns. I agree with the guy who said lettuces can be counted before shred and serve but usually use as uncountables on the table.
