SAT score is not enough for admission purpose to UK colleges. Usually they require AP scores if the applicants are from US education system. The requirement differs widely amongst colleges.
Some would ask for 5 AP (full subject plus at least 3 from Group A) of score 5 and some would ask 3 AP of score 4.

The AP qualification is fully recognised for admission purposes by all UK colleges (save a few colleges would not admit medicine student on his strength of AP). In fact, AP qualification is fully recognised by all local university for admission purpose.

As far as I know, most UK colleges would not consider the SAT score seriously save Cambridge and Oxford which would expect the students to have SAT score of 2,200. In any event, I would suggest that a score of 2,100 is competitive as far as SAT score is concerned.
As a matter of fact, the AP level is much higher than the SAT subject level. Your son should aim to score 5 on all his AP courses.

My son had 2 AP score 5 when he made applications to UK law schools. He received 4 offers from the top tier UK law colleges. He was not successful in his application to Cambridge.

Apart from the 2 AP scores he had obtained in his junior year, he attempted 6 AP (4 full subjects) in his senior year.

AP Physics C - Mechanic (1/2)
AP Physics C - E & M (1/2)
AP Microeconomic - (1/2)
AP Macroeconomic - (1/2)
AP Calculus BC
AP World History

Economic is a Group B subject and the others are Group A subjects.

The lowest offer from one of the London college was 3 AP scores of 4 taken in his senior year.

The highest offer from another college in London wass score 5 from World History and Calculus BC plus 3 scores of 5 from the other subjects (totally 5 AP of score 5 with 2 designated subjects).

The middle offer from another college in London is 4 AP score 5 (out of the 6 examinations he took)

The other offer from a top 10 college is 4 AP score 5 with World History one of the required subject.

Physics C and Economics are divided into 2 parts. The whole Physics C or Economics is regarded as a full AP subjects.
Physics C - Mechanic and Physics - E & M are regarded as 2 AP but each one is a one-semester course. Likewise, Economics is divided into Microeconomics and Macroeconomics. Each of them is also a one-semester course.

For other AP subjects such as World History, Chemistry, Biology or Calculus (AB or BC), they are 2-semester courses (taught in a full year) and is regarded as full subject.

Yes, if you want to know his full academic record.
Group A subjects are the traditional subjects such as World History, Physics, Chem, Bio, Calculus, all foreign languages, English language and literature and so on.

Group B subjects are survey courses such as Economics, Psychology, Art History, statistics etc.

Only 2 subjects are divided into 2 parts, - Physics and Economics.
